Southern Style Pasta Salad
With corn, tomatoes, nuts and herbs, this fresh take on pasta salad will have your family coming back for seconds and thirds.

Ingredients
- 16 oz Luxury Elbows
- 1 pkg (16 oz) frozen yellow sweet corn
- 3 tomatoes, diced
- 1/2 cup toasted pecan pieces
- 1/4 cup apple cider vinegar or white wine vinegar
- 1/3 cup olive oil or vegetable oil
- 1/4 tsp garlic powder
- 1/3 cup fresh minced basil leaves
Directions
- Cook pasta according to package directions. Drain and immediately place in a large bowl. While pasta is hot, stir in corn and blend until corn is thawed. Stir in tomatoes and pecans.
- Stir together vinegar, olive oil and garlic powder. Pour over salad and add basil leaves. Gently stir to blend.
- Tip: Toasting intensifies the flavor of the pecans. To toast nuts, spread them in a single layer on a baking sheet. Bake 5 to 7 minutes at 350°F or until toasted.
- Option: Omit basil and add 2 stalks celery, chopped.
