Ingredients

  • 8 oz. Medium Egg Noodles
  • 1/4 cup butter
  • 1 pound boneless, skinless chicken breasts or thighs, cut into bite-size pieces
  • 1 large carrot, chopped
  • 3 1/2 cups low sodium chicken broth
  • Salt and pepper, to taste

Directions

  1. Melt butter in a large skillet over medium-high heat.  Add chicken and carrots and cook, stirring frequently, for 10 minutes or until chicken is done and carrots are tender.
  2. Add broth and season with salt and pepper.  Heat until simmering. Reduce heat to maintain a simmer and stir in noodles.  Cook, uncovered, stirring frequently, 8 minutes or until noodles are tender.
  3. If desired, add 1/2 medium onion, chopped and/or 1 medium stalk celery, chopped along with the carrots.  Proceed as recipe directs.
