Louisiana-Style Pasta with Smoked Sausage

Ingredients
- 12 oz Luxury Medium Egg Noodles
- 2 Tbsp vegetable oil
- 1 pkg (16 oz) frozen pepper stir-fry blend with sliced bell peppers and onions
- 1 pkg (14 oz) New Orleans Style smoked sausage or regular smoked sausage, sliced crosswise into pieces about 1/2-inch thick
- 1 can (28 oz) crushed tomatoes
- 1 Tbsp Cajun seasoning
- 1/2 cup heavy whipping cream
Directions
- Cook pasta according to package directions using a Dutch oven or large saucepan; drain in a colander and return pasta to Dutch oven.
- Heat oil in large skillet over medium-high heat. Cook vegetables until tender, about 5 to 8 minutes, stirring frequently.
- Add sausage to vegetables and cook for 3 to 4 minutes, stirring frequently.
- Stir tomatoes and Cajun seasoning into mixture. Continue cooking over medium heat, stirring occasionally, until heated through and simmering. Reduce heat to low and stir in cream.
- Pour meat and vegetables over noodles and stir gently to blend.
