Cajun Pasta With Smoked Sausage

Ingredients

  • 16 oz Luxury Rigatoni
  • 2 Tbsp vegetable oil
  • 1 large onion, quartered and thinly sliced
  • 1 medium green bell pepper, quartered and thinly sliced
  • 3 cloves garlic, minced
  • 1 lb smoked sausage, sliced 1/2-inch thick
  • 1 can (28 oz) crushed tomatoes
  • 1 can (14.5 oz) diced tomatoes
  • 3 to 4 tsp Creole or Cajun seasoning
  • 1/4 cup heavy whipping cream
  • Salt and pepper, to taste

Directions

  1. Cook pasta according to package directions; drain.
  2. Meanwhile, heat oil in a Dutch oven. Add onion, green pepper and garlic and cook 3 to 4 minutes or until onion is wilted, stirring frequently. Season vegetables to taste with salt and pepper. Stir in sausage and cook 3 to 4 minutes or until sausage is browned and vegetables are crisp tender, stirring frequently. Stir in tomatoes and seasoning. Simmer 5 to 10 minutes.
  3. Stir in cream and pasta.
  4. For a spicier dish, add a few drops of hot pepper sauce or cayenne pepper, to taste, just before serving.
