Boursin and Mushroom Pasta
A very easy and delicous recipe perfect for entertaining or for your family on a typical weeknight!

Ingredients
16 ounces Luxury Penne, Elbow Macaroni, or Shell Pasta
1 Tablespoon butter
1 Tablespoon olive oil
1 pound mushrooms, thinly sliced (or substitute mini-portabella’s for a nuttier flavor)
1/2 teaspoon salt
1-¼ cup chicken broth
5-½ ounces, Boursin cheese
1 pound asparagus, cut into 1/2 inch pieces
Directions
- Melt butter with oil over moderate heat
- Add mushrooms and salt and cook, stirring occasionally, until the mushrooms are tender and well browned (about 8-10 minutes)
- Add the chicken broth and the Boursin cheese and bring to a simmer while stirring
- Cook the pasta until almost done and then add asparagus and cook untill it and pasta are finished cooking; drain
- Toss with mushroom sauce and serve
