Chicken Mushroom Penne in Dijon Cream Sauce
A French-inspired classic with an easy, quick-to-make sauce of cream and Dijon mustard.

Ingredients
- 13.25 ounces Luxury Whole Wheat Penne
- 2 boneless, skinless, chicken breast, diced into 1/2 inch pieces
- 1/3 cup white wine or chicken stock
- 1/3 cup olive oil
- 1 cup mushrooms, sliced thin
- 2-1/2 cups heavy cream
- 2 tablespoons Dijon mustard
- 1 tablespoon green onions, diced
Directions
- Cook pasta according to package directions.
- Heat oil in the sauté pan until it smokes. Quickly add the chicken and brown on both sides.
- Add mushrooms. Sauté for 1 minute.
- Deglaze with wine and reduce heat by half.
- Add cream and mustard, cooking until the sauce is slightly thickened.
- Toss in pasta until hot. Garnish with green onions. Serve immediately.
